Recipe instructions:


Coarsely chop the onion and put in a bowl.

In a bowl, mix the eggs with milk until combined. Season with salt, pepper, and chili.

Peel and dice the potatoes into approx. ½ in cubes.

Heat the canola oil in a non-stick frying pan over medium heat. Add the potatoes into the pan and fry until golden brown.

Add the onions and fry until the potatoes are cooked. Season with salt and pepper.

Add the egg mixture and fry until the egg starts to sit. Start stirring and keep cooking until the eggs are done.


    Finely chop the parsley. Place the fried potatoes on a plate and garnish with parsley.
