Heat the margarine in a big pot on medium heat.
When the maragarine has melted add the rice and fry until translucent.
Add the milk, sugar, cinnamon and vanilla and bring to a boil.
Turn the heat to low and let simmer for 30 minutes. Stir after 15 minutes. Stir in the yogurt and set aside.
Core the nectarine, dice and set aside. Roast the amaranth in a non-stick frying pan over medium heat, add the agave syrup and caramelize until golden brown. Turn off the heat and set aside.
