Preheat the oven to 425 °F.
Finely dice the apple and coarsely chop the walnuts.
Heat the oats, milk, cinnamon, and vanilla in a pot over medium heat until it starts to boil. Cook, stirring constantly until the porridge is creamy.
Transfer the oatmeal to a baking dish, top with the walnuts and apples.
