Heat a non-stick frying pan over medium heat. Add the strawberries and vanilla and cook for approx. 5 minutes, stirring occasionally. Turn off the heat.
In a pot, bring the milk to a boil. Pour in semolina in a steady stream, whisking constantly to prevent lumps. Cook until porridge thickens and turn off the heat.
Add the yogurt and honey to the pot, stir until well combined and put in a bowl.
Finely chop the mint, stir it into the semolina porridge and serve with the warm strawberries.
