Clean and slice the mushrooms. Dice the zucchini and tofu into approx. ½ in cubes. Put the mushrooms and zucchinis in a bowl and the tofu in another one.
Prepare the pasta according to the package instructions.
Heat the canola oil over high heat in a non-stick frying pan and fry the tofu until golden brown. Turn the heat to medium level, add the mushrooms and zucchini and fry until the mushrooms start to brown.
Add the pasta, soy sauce, water, and pepper. Mix well and cook for another 3 minutes.
