Clean and slice the mushrooms. Cut the zucchini lengthwise into quarters, slice afterwards and put in a bowl. Cut the chicken into strips and put in a second bowl.
Finely chop the garlic and ginger.
Prepare the pasta according to the package instructions.
Heat the canola oil in a non-stick frying pan over high heat. Fry the chicken until browned, remove it from the pan and set aside.
Heat the canola oil on medium heat. Fry the mushrooms, zucchini, garlic, and ginger for approx. 5-6 minutes.
Turn the heat to low. Add the chicken, pasta, soy sauce, salt, and pepper, mix well and fry for approx. 3 minutes.
