Cook the quinoa according to the package instructions. Heat a non-stick frying pan over medium heat. Cook the spinach until completely defrosted, stirring occasionally.
Preheat the oven to 350 °F. Grease a baking dish with olive oil.
Finely chop the garlic and grate the Parmesan.
Mix the eggs, cream cheese, parmesan, pepper, garlic, spinach, quinoa, salt and pepper in baking dish.
Bake for approx. 30 minutes until golden brown.
