Coarsely chop the onion zucchini and finely chop the garlic. Put the zucchini and garlic in a bowl.
Heat the olive oil in a pot over medium heat. Sauté the onions until translucent. Add the zucchini and garlic and fry for approx. 3-5 minutes.
Pour in the vegetable broth, bring to a boil and let simmer for approx. 15 minutes.
Remove the pot from the heat and blend with an immersion blender until creamy.
Season with salt, pepper, crushed pepper, and lemon juice.
Coarsely chop the mint and cilantro. Serve the soup with bread and top with the mint and cilantro.
