Preheat the oven to 325 °F.
Separate the egg whites from the yolks. In a bowl, mix the yolks with cream cheese and salt.
Beat the egg whites until stiff and fold into the mixture.
Line a baking tray with parchment paper. For each oopsie, spoon about 3 tablespoons of batter onto the parchment paper. Use the back of the spoon to spread into circles. Bake for approx. 25 minutes until golden brown.
Peel and remove the pit from the avocado, put in a bowl and mash with a fork.
Finely chop the tomato and onion, add to the bowl and mix well.
Season with salt, pepper, and lemon juice.
Spread guacamole onto the oopsies and top with the salmon.
