Rinse and drain the lettuce and put into a bowl.
Coarsely chop the walnuts, cut the pepper into strips, halve the tomatoes and add to the bowl.
Cut the mozzarella into bite-size pieces and the chicken breast into strips. Add them both into the bowl.
Add the olive oil and balsamic vinegar to a mason jar. Screw the lid on tightly and shake vigorously until combined. Season with salt and pepper.
Drizzle the dressing over the salad and toss lightly until coated evenly.
