Preheat the oven to 400 °F.
Cut the onion into eighths. Cut the zucchini into quarters and cut into approx. 1 in slices, halve the tomatoes and add everything into a baking dish.
Finely chop the garlic. Add the garlic, olive oil, honey, soy sauce to the baking dish and mix thoroughly
Add wine and spices and mix well.
Wash the salmon, pat dry and place onto the bed of the vegetables with the skin side down. Season generously with salt and pepper.
Seal the baking dish with tinfoil and bake for approx. 20-25 minutes.
Serve the salmon and veggies on a plate.
