Cut the tofu into approx. ½ in thick slices.
Heat the olive oil in a non-stick frying pan over high heat. Add the soy sauce and fry the tofu until golden brown from both sides, remove from the pan and set aside.
Cut the onion into rings. Clean and slice the mushrooms.
Heat the olive oil in a non-stick frying pan on medium heat. Add the soy sauce, onions and mushrooms and fry for approx. 6 minutes.
Rinse and dry the spinach.
Toast the bread in a toaster until crispy. (optional) Spread the hummus onto the bread and top with the spinach, mushroom mixture and tofu.
