Preheat the oven to 400 °F.
Dice the sweet potato and cut the onion into eights and spread on a baking sheet lined with parchment paper. Bake for 20-25 minutes until the sweet potato is soft.
Peel the avocado, remove the pit and dice it. Halve the tomatoes finely chop the salad and add everything to the bowl.
Finely chop the garlic and mix with olive oil, lemon juice and cumin.
Dice the halloumi and fry in a pan on medium heat until golden brown. Add into the bowl alongside the sweet potato and onions.
