Clean and thinly slice the mushrooms. Cut the green onions into rings, dice the tofu and add everything to a bowl.
Heat the canola oil in a non-stick frying pan over medium heat. Fry the gnocchi until golden brown and set aside.
Add the canola oil into the pan. Fry the green onions, tofu, and mushrooms for approx. 3-4 minutes until the vegetables start to brown.
Deglaze with white wine and reduce to half.
Stir in the vegetable broth, Vegan Cream Alternative, and mustard and let simmer until the sauce is creamy.
Season with salt and pepper. Turn off the heat, add the gnocchi to the pan and warm with the residual heat.
