Add the ground beef, egg and ground almonds to a bowl.
Finely chop the dried tomatoes, garlic and basil and add to the bowl.
Season with salt and pepper. Mix thoroughly and form golf ball-sized balls.
Heat the olive oil in a non-stick frying pan over medium heat and fry the balls for approx. 3-4 minutes until golden brown all around.
Dice the mozzarella and halve the tomatoes.
Place meatballs, alternating with mozzarella, basil and cherry tomatoes on a platter. Season with salt and pepper.
