Prepare the couscous according to the package instructions using vegetable broth instead of water.
Finely chop the cilantro, halve the tomatoes and put into a bowl.
Dice the pepper, tofu, avocado, and cucumber and add to the bowl.
Add the tomato paste, curry paste, white wine vinegar, olive oil and soy sauce to a mason jar. Screw the lid on tightly and shake vigorously until combined. Add to the bowl together with the couscous and mix well.
