Finely dice the onion, garlic and pepper.
Heat the canola oil in a non stick frying pan over medium heat. Fry the onion, garlic and pepper until the onions turn translucent. Add the tomato paste and fry for approx. 1 minute.
Add the chopped tomatoes, corn, cocoa powder and chili into the pan and let simmer for 5-7 minutes. Stir occasionally.
Heat the canola oil in a non-stick frying pan over medium heat. Add the eggs and fry until the whites are set, but the yolks are still runny.
Serve the bean veggie mix, season with salt and pepper and top with the cheese and eggs.
