Cut the chicken breast into strips. Chop the carrot, clean and dice the mushrooms, and put in a bowl. Finely chop the onions and garlic and put in a second bowl.
Heat the canola oil in a non-stick frying pan over high heat. Fry the chicken until golden brown and set aside.
Add the canola oil into the pan, turn the heat to medium and fry the onions and garlic until the onions turn translucent.
Add the carrots and mushrooms and fry for approx. 4-5 minutes.
Add the chicken, bean sprouts, and soy sauce and fry for approx. 1-2 minutes.
