To assemble the sandwich, top the toasted side of bread slice with cheese. Top with the remaining bread slice. Halve the tomatoes and put in a bowl.
Heat the butter in a non-stick frying pan over medium heat. Fry the sandwich from both sides until golden brown.
Put the toast on a plate, add the olive oil to the pan and fry the cherry tomatoes for approx. 3 minutes and season with salt and pepper.
