Cut the zucchini into approx. ¾ in thick slices. Finely chop the garlic and put everything in a bowl.
Dice the tomatoes and feta and put in a second bowl.
Cut the chicken breast into strips.
Heat the olive oil in the pan and fry the chicken strips until golden brown and cooked through. Remove from the pan.
Heat the olive oil in the pan over medium heat. Fry the garlic and zucchini for approx. 5 minutes stirring occasionally. Season with salt and pepper and remove from the pan.
Add the tomatoes, feta, and oregano to the pan and cook on low heat until the sauce is smooth and creamy. Add a splash of water if the sauce is too thick.
Add the zucchini and chicken, mix well and heat until warm.
