Wash and drain the spinach. Cut the tortilla into approx. ½ in thick and ¾ in long strips and put everything into a bowl.
Slice the beetroot thinly, chop the walnuts and add everything into the bowl.
Mix the olive oil, honey, and lime juice and drizzle over the salad.
