Finely chop the garlic. Toast the pine nuts on medium heat in a non-stick frying pan without oil until golden brown and set aside.

Heat the olive oil in a pot over medium heat. Fry the garlic until it starts to brown, add the spinach and let defrost.

Add the pine nuts into the pot and blend with an immersion blender until smooth. Grate the parmesan and mix with the pesto.
