Cook the rice according to the package instructions.
Cut the zucchini lengthwise into quarters and cut into approx. ¾ in slices. Halve the tomatoes and dice the feta. Put the zucchini and tomato into a bowl and the feta into a second bowl.
Finely chop the onion and garlic.
Heat the olive oil in a non-stick frying pan over medium heat. Sauté the onions and garlic until the onions turn translucent.
Add the zucchini, tomatoes, and thyme and fry for approx. 5 minutes.
Turn off the heat, add the feta to the pan and warm with the residual heat. Season with salt and pepper.
Serve the veggie feta sauce on a bed of rice.
